Session 1 Shopping List

  • Liquids & Seasonings:
    • 3 Gallons Spring water
    • Kosher or sea salt
    • Black Peppercorns
    • White pepper
  • Poultry and beef bones:
    • 1 large package of chicken assorted parts
    • Chicken necks and bones (if available)
    • Beef bones (check with local meat department or butcher)
  • Vegetables:
    • 3lb. Spanish Onion
    • 1 Bunch Celery
    • 3lb. Carrots
    • 2lb. Tomatoes (ripe)
    • 4oz. Shallots
    • 1 head garlic
  • Herbs:
    • Bunch of Thyme
    • Bay leaf
    • Bunch of Parsley
  • Other:
    • Cheesecloth
    • 1lb. salted butter (name brand)

Sessions 2 and 3 shopping lists will be provided at the end of session 1.
